Organically grown & local, this Murasaki variety has become famous in the last few years - while it was actually bred in Louisiana, many know these as a Japanese sweet potato (hence the name).

It has a deep purple/magenta skin and white flesh that turns a golden color when cooked. These potatoes are both creamier & drier than regular sweet potatoes, which they get crispier on the outside while still having creamy centers. Perfect for roasting & sweet potato fries!
